Avocado Slaw


I love this recipe for using up avocados that are almost on the point of turning. Perfect with everything, this recipe would be great for picnic or BBQ's. Combining flavours of guacamole and Asian influences, this take on coleslaw is fresh and utterly delicious. Serve this as a side or as a topping for burgers. Super quick and easy, this recipe is a no-brainer.

Ingredients:

1 bell pepper
1 large carrot
2 sticks celery
large handful mange tout beans
1 very ripe avocado
1tbsp sesame oil
1tbsp lemon juice
small handful of fresh basil
salt and pepper to taste

Method:

Finely chop the pepper, carrot, celery and beans; I like to chop mine into thin batons. Place in a large bowl and coat with the lemon juice and sesame oil. Mash the avocado and finely chop the basil. Add to the bowl and season generously with salt and pepper. Mix thoroughly ensuring everything is well coated in avocado. Enjoy!
